			虹吸壺進行咖啡萃取的主要原理是通過壓力差實現的，首先將下杯水加熱至沸騰，然後插入上杯，使得下杯呈現真空狀態，由於下杯和上杯的壓力差使得熱水上行與上杯咖啡粉進行混合並萃取，萃取過程結束後撤掉下杯的火源，使得下杯與上杯之間的壓力差瞬間減小，上杯與下杯之間的重心引力會促使咖啡萃取液迴流至下杯，如果要咖啡萃取液迴流速度加快，可以用一個溼抹布擦拭下杯，這樣可以讓上下杯壓力差更小咖啡萃取液迴流速度更快。</div>

			先來介紹一下使用虹吸壺需要準備的基本工具：</div>

			1. 虹吸壺（上壺、下壺、虹吸壺濾布）</div>

			●準備工作</div>

		<div>
			1. 虹吸壺下壺加水，我是要做兩人份的咖啡，就將水加在虹吸壺2人份標誌上方5mm處，這是因爲粉會吸水噢，所以想要兩人份的咖啡液，水就要適當的多加一些纔行。</div>
		<div>
			&nbsp;</div>
		<div>
			2. 研磨<a href="https://www.gafei.com/kafeidou/20180513117422.html">虹吸壺咖啡豆</a>，咖啡粉準備25-30克（單杯的量研磨約15g），要中度研磨，也就是顆粒介於白糖和黃糖之間</div>

			3. 水加好後記得用軟布將下壺外面擦乾，不要殘留水漬，以免加熱時爆壺。</div>

			4. 下壺內裝入熱水，用酒精燈加熱，一般單杯咖啡用水約120cc，雙人分量250ml</div>

			5. 好了，開始燒水吧</div>

		<div>
			在水加熱到可以沖泡的時間，把濾布片裝在上壺內，注意一定要象如下方圖片上這樣把鉤子勾住噢！不然下壺的水衝向上壺時，濾片會被衝開的。</div>
		<div>

			●【先投粉】</div>
		<div>
			&nbsp;</div>
		<div>
			先投粉就是先把咖啡粉放入上壺，然後再讓水上到上壺。先投粉對於火力的控制力要求比較高，在水上升的同時就要將火力調整到適當的大小，以免產生大量氣泡破壞了悶蒸，同時先投粉最好在事先先空燒一壺水以測試下濾網的位置是否正中，如果不正中一樣會產生大量的連續氣泡。先投粉的好處在於對咖啡粉有個漸進的溫溼過程，可以減少第一次攪拌的圈數，更有利於形成悶蒸效果。但是對於溫度的控制會較差，所以將上壺插入下壺的時機把握會尤爲重要，也就是說先投粉看似簡單，其實相對後投粉而言需要更豐富的實戰經驗。</div>

			●【後投粉】</div>

		<div>
			與先投粉相反，後投粉就是讓下壺的水完全上升到上壺之後，再投入咖啡粉。後投粉前，我們可以有充足的時間將火源的火力調小恰好支撐住上壺的水不會回落。然後調整下濾網的位置，讓其保持居中的位置，最後可以稍等數分鐘，讓水溫少許的回落一點。一般情況下，下壺的水剛上升到上壺時水溫會在90&mdash;&mdash;95度左右，所以我們可以讓水溫回落2&mdash;&mdash;5度左右再投入咖啡粉。一般來說，水溫越高，咖啡的苦味就越重，甚至會出現焦味，而溫度越低，則酸味和香氣就越明顯，但過低也會萃取不足降低醇度並讓酸味變得非常刺激，所以根據所萃取咖啡選擇一個合適的水溫投下咖啡粉至關重要。</div>

			●兩種投粉方法我們都可以嘗試一下，甚至可以在積累了一定的經驗之後，根據不同的咖啡豆特性，或者根據不同的萃取要求來選擇不同的投粉方法。</div>

			然後將咖啡粉以順時針方向由外向中間攪拌，此過程持續10秒鐘以保證將所有咖啡粉浸入水中；接着開始計時，經過45秒（該過程通常我們叫悶蒸）的時間重新用攪拌棒以順時針/十字型方向開始對咖啡液進行攪拌，攪拌時間爲5秒；50-55秒後關火，然後迅速撤掉酒精燈並熄掉火源，咖啡液開始從上杯向下杯迴流；再稍微攪拌，其次待自然冷卻讓上壺的咖啡流下;</div>
