哥斯達黎加的咖啡豆是愛喝咖啡所熟悉的咖啡產區之一,地理位置坐落在中美地峽,同時受到太平洋、大西洋洋流與海風對氣候的調控作用,海拔可是高達2000米的高聳火山,咖啡漿果那是在肥沃的火山灰土壤與高海拔冷涼的環境中緩慢醞釀而成長出來的,孕育出風味完整而豐富的咖啡豆</div>

不過卻是非常需要大量使用水資源,不但成本高,而且環境衝擊也很大。</div>

近幾年哥斯達黎加極力發展蜜處理,許多微型處理廠也紛紛成立,</div>

莊園會採收完全成熟與品質良好的咖啡豆,以節約水資源的處理方式,使用碎漿機去除外果皮,利用刮除機調整果肉刮除程度的功能,將帶著果膠的帶殼生豆放置在所謂非洲式棚架上進行日曬,</div>

乾燥過程中也須保持適量的空氣流通,不然失敗的蜜處理法,很容易會有不舒服的過度發酵味</div>

蜜處理法耗水量僅需傳統水洗處理廠的5%,而且也不需要龐大的水槽與曝曬場,所需要的投資相對小許多。</div>

甜香濃郁的"蜜處理咖啡"就此成了近年咖啡界競逐的標的;當中的佼佼者近年在各大比賽大放異彩,大大提升了各莊園的國際知名度。</div>

許多人都會好奇,爲什麼哥斯達黎加的蜜處理有分顏色呢?</div>
<div>
</div>
<div>
這正是哥斯達黎加近年來開發出的更精良的蜜處理方式,哥國引進了許多先進的機器,可以控制去除果皮及果肉的比例,其中衍生出的白蜜、黃蜜、紅蜜到黑蜜處理法,中間的差異正是保留果肉的多寡。</div>

留下果肉最少的就是白蜜,白蜜最接近水洗法,僅留下約20%的果肉,風味較乾淨,酸度明亮。</div>

其次則是黃蜜(40%果肉)、紅蜜(60%果肉),而黑蜜留下的果肉最多,約80%,相對其他蜜處理,則相對接近日曬法,甜度較明顯,風味也較多元。</div>

所以在選擇使用什麼樣的果肉比例,也要看咖啡果實本身的風味與處理廠的發酵控制技術,確實是門大學問。</div>
