	　　Devon Zhang的TC精品咖啡館藏在上海浦東陸家嘴的一棟寫字樓內，&ldquo;我們要求咖啡師必須戴圍裙進吧檯。首先是出於衛生原因，其次，能讓他們在最大穿着自由度下展現專業性。&rdquo;於他而言，咖啡師最本質的任務不在做咖啡，而是傳達咖啡文化。</div>

	　　同樣的裝束出現在歐洲大街小巷，電影、小說中也不乏經典形象。和連鎖咖啡店相比，歐洲大一些的咖啡館裏咖啡師與侍應各司其職，但街區小店通常是由一人包攬飲品製作與服務。咖啡師或談笑風生，或尖酸刻薄，或高傲寡言，但裝束相差無幾：襯衫、西褲，有些腰間還繫着熨燙平整的圍裙，角落也許還繡有咖啡館名稱。</div>

	　　這套穿衣鐵律源於19世紀巴黎格蘭大道（Les Grands Boulevard）上的那些咖啡館。原因非常簡單：讓店員區別於顧客。有時他們身上的馬甲會有很多口袋，便於找零。始建於1897年的佛羅倫薩咖啡廳Caff&egrave; Giubbe Rosse受當時維也納時尚之風影響，咖啡師們在白色襯衫之外穿着紅色馬甲。</div>
