不知道你在東南亞其他地方怎樣，但我在新加坡街頭、越南拐角、馬來西亞某塊招牌面，每每不知所措。雖然“咖啡”這樣東西在傳播的最初年代就被聰明的祖先們“放之四海而皆準”地使用了音譯，並沒有太大的視聽障礙，即便新加坡人總是用發音源自閩南話的Kopi 來稱呼咖啡，也並不是什麼大不了的事，但我和我身邊那些白膚金髮、對咖啡非常有自信的歐洲人一樣，不知道Kopi O 和Kopi C是各遭了什麼罪孽，竟然可以果斷地被這樣莫名其妙地就寫上了 咖啡館 的招牌，而那通常是Espresso 或者Cappuccino 在星巴克的位置。</p>
<p>
開啓東南亞咖啡之旅的大門</p>
<p>
當然，我相信我比我身邊那位還要幸運一些，起碼，通過灰色腦細胞輕輕一想，還是明白Kopitiam(新加坡的咖啡館稱法)這個詞到底發生了什麼事，那基本上就是中文(閩南話)“ 咖啡店 ”的音譯。事實上，新加坡、馬來西亞這些東南亞國家的咖啡館原本就與中國淵源頗深，倒並不僅是華人多的原因。據新加坡著名美食指南Makansutra 的創辦人K.F.Seetoh 介紹，20 世紀初期，在新加坡和馬來西亞等地開了許多本地咖啡館，而 開店 和光顧咖啡館的大部分是“下南洋”的國人們，富賈們腰包鼓鼓來到新世界，爲融入所謂英語文明世界，以西方文明爲時尚潮流，到咖啡館小聚，便不小心便成爲一種文化。</p>
<p>
當然，咖啡館裏還有其他好處，足令擅長實用主義的國人滿意。當時這些開咖啡館的許多來自中國的海南，這也是新加坡的趣事一件。據說當年投奔新加坡的國人總是按照省份有不同的批次，而海南人最後趕到，大部分行業已被其他省份人佔據，海南人便只能操持餐飲業，其中海南雞飯便因緣際會成爲當地名菜。而這些開咖啡館的海南人也大都享有同樣經歷，他們在英國的輪船上工作時，常常在廚房幫手，等到“葉落歸根”，從飄零的海面回到陸地，就帶回了英國人的餐飲文化(這在當時的新加坡，顯然比中餐更爲暢銷)。</p>
<p>
在當年的咖啡館裏，座位衆多，隨同咖啡一起供應廉價早餐或者午餐。雖然大部分傳統的新加坡Kopitiam 如今已經改頭換面，比如亞坤或者Killiney Kopitiam，都已連鎖 經營 ，但仍有例外，比如開在東區East Coast 路上的真美珍咖啡及西菓店(Chin Mee Chin Confectionery)就一直維持原貌，在四分之三時間是夏季的新加坡竟然連空調都不裝，足見昔日咖啡館，並非什麼奢華享樂的場所，不過是茶館的一種變形罷了。但菜單上大抵是西式做派，一份典型的早餐(只會令你的荷包扁一點點)包括一杯咖啡或茶，一個半生的煮蛋，隨同碟子和醬油送上。本地人典型的喫法，便是將蛋打進碟子裏，然後拌上醬油，撒上胡椒，好像喫布丁一樣喫進去。</p>

咖啡這種舶來品之所以能進入東南亞西方殖民主義功不可沒</p>
<p>
另外還有一份不可少的便是所謂的Kaya Toast，直譯應當叫咖椰吐司，黃油和自制Kaya 醬並不是放在一側等你取用，而是事先厚厚地抹上(或只抹Kaya 醬)。kaya 醬是本地化的經典創作，這種甜膩膩的椰醬絕對體現了亞洲各族人民的共同愛好。那家真美珍直到現在依然門庭若市的原因，據說是那裏的半生蛋總是恰到好處，而Kaya 醬也總是最地道的。前頭所說的Kopi O 或者Kopi C 什麼的，實際算是“黑話”了。</p>
<p>
這裏的咖啡從不規規矩矩地與牛奶和糖一起上桌。它們通常在製作時便更多一些加工，比如與玉米粒(也有說糖)以及黃油一起幹炒，Seetoh 表示，這會令咖啡有些淡淡的甜味，“在舊時，他們還用豬油炒，但如今卻再也不會了”。而在咖啡館， 咖啡師 會將加工過的咖啡粉裝進長長的厚“襪子”裏，這是一種織物製成的咖啡過濾器，長久下來便浸潤了咖啡的滋味(彷彿紫砂壺)。Seetoh 強調，雖然一天下來，那些“襪子”總得徹底沖洗，但卻未必能洗得乾淨。</p>
<p>
然後，他們就會用熱水衝過“襪子”的 咖啡豆 ，直接衝到已經放了煉乳或者牛奶和糖的杯子裏，便又是一杯“又香又濃”的咖啡。Kopi C 指的是隻加牛奶的咖啡，而C 其實來自Carnation(康乃馨)，這是大多數新加坡咖啡館選用的一種罐裝牛奶品牌，雖然現在許多咖啡館已經不用這個牌子了，但並不妨礙這種“黑話”繼續流行。Kopi O 指的是黑咖啡(要加糖)，據說在閩南話裏是“黑色”的意思，Kopi Siutai 的意思是少加一點糖，而Kopi Kosong 則是不加糖也不加奶的咖啡，因kosong 在馬來話裏表示“無”。而如果只是說kopi，那麼加的是煉乳和糖，因爲他們一直就是這樣加的，其他都建立在它的基礎之上。</p>
<p>
最有趣的是Kopi Tarik，這個是指那種在上桌前會在兩個杯子裏被倒來倒去的咖啡，而Tarik 就是“倒回去”的意思。最初的作用是爲了降溫，新加坡實在太熱，不適合熱飲，但這樣的方法通常會在咖啡中製造許多的泡沫，就好像卡布奇諾一樣，因此他們又發明了一種新產品，叫做Kopiccino，真是一個天才的想法。要融會貫通這些“黑話”不容易，但我們可以試着學習，比如我要一杯冰奶茶，少放一點糖，那麼就說，Teh C PengSiutai(真是簡潔明瞭)，Teh 表示茶，而Peng 在閩南話裏是冰的意思。怎麼樣，不難吧，也就是些單詞問題，還沒上升到語法高度。但有一點可以指出的是，東南亞咖啡館之所以喜歡用煉乳來代替牛奶，可能因當地如今更多產自非洲的羅布斯塔咖啡，這種咖啡比起歷史悠久的阿拉比卡咖啡更擅於抵擋病蟲害，但味道卻會更苦，重口味自然需要重調節，也在情理之中。</p>
