萃取就是讓物質溶於水的過程。萃取的原理無非就是咖啡粉與水接觸之後釋出需要的物質。悶蒸是浸潤所有咖啡粉,給下面的正式萃取做好準備。
手衝咖啡是風味萃取 + 過濾同時進行的過程,而且是以倒入水的位置爲中心發生萃取,關鍵在於如何控制和平衡,烘焙豆子中各種成分的萃取量來調製咖啡。
V60是最常用的濾杯,V60有兩種衝法:一段注水、或三段注水法。我覺得後者比較適合咖啡館,因爲出品比較穩定。在看Scott Rao的視頻,講述了他在悶蒸時使用湯匙翻攪以幫助排氣,歐洲各家吧檯手開始紛紛仿效。Scott Rao上課的過程中,也可以看見他在衝煮V60時的豪邁,但配合其他手法的幫助可以非常有效率的提升萃取效率。
這次Scott Rao帶來了完整的衝煮說明。真的相當完整,完整到影片足足有12分鐘這麼長,還有不同角度鏡頭的展演。
以下我們簡單的記載了一些影片中的重點,不過在衝煮之前,需要有一些觀念及想法。衝V60 01 的咖啡粉控制在15-20克,原因是咖啡粉少了需要磨更細(但是粉越細=咖啡越苦),且咖啡粉少的話,平均水溫也略低。
重點:
1、 磨細?還是磨粗?
如果不談TDS,不談萃取率,單純地以品嚐來說,Scott Rao認爲只要在品嚐中沒有緊縮的澀感出現,你就可以大膽地繼續磨細。直到你的咖啡出現了這個口感的時候,可以退一步磨粗個幾格。
2、好的衝煮指標?
在影片中,Scott Rao針對悶蒸提出可以觀察的重點:‘氣泡’。在越短時間讓咖啡粉中的氣體完全排出,代表更快讓咖啡粉進入到一致的狀態,也可以在萃取上達到較一致的成效。均勻的萃取,可以讓風味更明顯,也可以讓調整比較有脈絡可循。
| 預浸泡 (Pre-wetting)
預浸泡會使咖啡粒子和可溶物質溼潤,也能幫助萃取時減少偏流。此階段以水3咖啡1的比率最爲合適。咖啡粒子會吸收自己重量的2倍水,所以2:1的比率不容易把整個咖啡層溼潤。因此,預浸泡時3:1的比率最合適。
另外,我想特別強調的是,預浸泡時必須需要攪拌過程。
我自己也測定過,預浸泡時,有攪拌過程跟沒有的結果有明顯的差異。攪拌能夠提高萃取的一致性、萃取收率。

影片最後呈現了衝煮完的粉層狀態。Scott Rao指出,衝煮完成的粉層應該是要像海邊被海水浸溼的沙子,且是要平整的。如果是呈現泥狀,且水流若在衝煮後期有堵塞的狀態,可以考慮將研磨度磨粗。

—V60 材質選擇 ‘塑膠’—
令人感到意外的,Scott Rao選擇的是塑膠的材質。理由是,塑膠的導熱較差,也代表着更多衝煮時的熱能較少被濾杯給吸收。

—V60濾紙選擇—
Scott Rao建議大家多買市面上不同的濾紙。一次將不同濾紙分別浸泡在水杯中10分鐘,品嚐杯中的水,找尋味道最少的。
—悶蒸動作—
Scott Rao建議使用三倍粉量做悶蒸,並使用湯匙輕輕攪拌。攪拌的目的是使粉層當中尚未被水浸溼的部分也能被浸溼。悶蒸可以藉由氣泡作爲指標,如果悶蒸開始10秒後沒有氣泡浮出,則代表非常好的悶蒸攪拌。

反之若衝煮到1分鐘時,還有氣泡浮出,則代表着部分的粉到1分鐘才被浸溼。這樣則較容易產生萃取不均的咖啡。
—注水時水位的高度—
Scott Rao 希望在注水時雖進行繞圈的動作,但要保持水位高度的一致,不要時高時低。水流不穩定,水流忽大忽小,時而猛衝,時而滴答滴答斷掉,導致咖啡粉各個區域浸泡程度不一,咖啡的口味都會被影響。
主要注水完的湯匙攪拌 ; 衝煮完成前的濾杯晃動
主要注水段落完成後,Scott Rao會再次拿起湯匙輕輕畫上一圈。這樣的動作是爲了避免咖啡粉黏着在濾杯杯壁,讓咖啡在整個衝煮過程中都可以繼續被萃取。
而在衝煮快要完成之前,Scott Rao會拿起濾杯輕輕的搖晃起下,爲的也是避免咖啡粉在杯壁上的沾黏,和更完整的萃取。
