咖啡拉花(latte-art)是在原始的卡布奇諾或拿鐵上做出的變化。</p>
<p>
關於咖啡拉花的起源,其實一直都沒有十分明確的文獻,只知道當時在歐美國家,咖啡拉花都是在咖啡表演時,所展現的高難度專業技術,而如此的創新技巧,所展現的高難度技術,大大震撼了當時的咖啡業界,從一開始就得到了大衆的注目。所有的人都深深被咖啡拉花神奇而絢麗的技巧所吸引。</p>
<p>
當時咖啡拉花,注重的大部份都是圖案的呈獻,但經過了長久的發展和演進之後,咖啡拉花不只在視覺上講究,在牛奶的綿密口感與融合的方式與技巧也一直不斷的改進,進而在整體的味道的呈現,達到所謂的色、香、味俱全的境界。</p>

<strong> 拉花方式</strong></p>
<p>
<strong> 咖啡拉花方式主要有兩種</strong></p>
<p>
<strong> 倒入成形Free Pouring</strong></p>
<p>
利用熟練的技巧,控制奶壺的高低,晃動奶壺的幅度及速度,使奶泡於咖啡上形成不同的圖桉</p>
<p>
<strong> 雕花Etching</strong></p>
<p>
於咖啡表面加上奶泡,醬料等東西,利用牙籤或溫度計等尖物凋畫出各種圖桉,這種方式不用多大的技巧,只需創意,就能製作出漂亮的咖啡了。</p>

<strong> 器具和材料</strong></p>
<p>
<strong> 1、咖啡豆和咖啡機</strong></p>
<p>
咖啡拉花,自然需要咖啡。要製作latte art,要使用特濃咖啡,咖啡可以是意式咖啡機做出來,沒有的話也可以用摩卡壺做出來。</p>

<strong> 2. 磨豆機</strong></p>
<p>
要咖啡新鮮,豆一定要現磨,用意式咖啡機的話,磨豆機不妨買部好一點的,磨豆機是耐用品,隨時長命過幾部咖啡機,用磨卡壺的話,手搖磨豆機己經很足夠,而且適用於其他衝煮方式。</p>

<strong> 3. 奶泡</strong></p>
<p>
接下來就是奶啦,打奶泡可以有三種方法:</p>

<strong> 意式咖啡機的蒸氣</strong></p>

奶泡壺</p>

打奶棒</p>

<strong> 4. 拉花壺</strong></p>
<p>
還有就是拉花壺,根據每部咖啡機的蒸氣壓力和每次製作的份量,自行選擇不同的大小,一般用0.3L/0.35L或者0.6L的壺都OK。</p>
