	　　臺灣咖啡12強+1日月潭邀請賽，凸顯臺灣咖啡的特質，賽事指定烘豆師陳志煌指出，臺灣咖啡非常細緻，以輕烘焙方式最能展現獨特的風味；但是，淺烘焙相對容易呈現豆子本身的缺點，那也是農民要克服的栽培管理技術。</div>

	　　魚池鄉長陳錦倫表示，比賽結束是另一個開始，因此，特別邀請2013年北歐杯咖啡烘焙賽冠軍（ Nordic Barista Cup）陳志煌，針對此次賽事烘豆的用心和經驗，向來自全國各地的咖啡農、業者講解，希望能帶動栽種、烘焙技術的提升；未來，也將帶著13支得獎的咖啡到全國各地舉辦品嚐分享會，藉此提升臺灣精品咖啡的質與量。</div>

	　　陳志煌指出，咖啡豆對於烘焙的反應非常敏感、細緻，只要環境變量有微小的差異，就可能造成明顯或非常巨大的影響。咖啡是2種味道的綜合體，其一是產區風味，其二是烘焙風味，烘焙愈淺則產區風味愈多，焙度愈深則烘焙風味愈多，這兩個味道像是翹翹板的兩端。</div>

	　　而臺灣豆的翹翹板平衡感迥異於國外豆，根據美國SCA（精品咖啡協會）的國際烘豆標準數據58／63烘臺灣豆，烘焙風味會遠遠蓋過產地風味，所以，今年臺灣咖啡12強+1日月潭邀請賽時，他將數據調成75／85，以更淺的焙法展現出臺灣豆子的原始風土氣味，嘗試找出臺灣咖啡的烘焙曲線。</div>
