新烘焙的咖啡豆會釋放出上百種化學物質,這需要用一兩天的時間使之消散,從而達到最佳的口味。現在,很多高質量的烘焙廠商,都將咖啡豆包裝在有單向閥的密封袋中,以使其中的氣體得以釋放,使咖啡豆不至於存放在對其有破壞性的氣體中。這種包裝有助於保持咖啡豆的品質。
如果咖啡豆不採用此種包裝方式,當包裝被打開後,咖啡豆就會開始變質。咖啡豆表面的油脂也會慢慢消失。咖啡豆的包裝打開後,如果保存恰當,在10天內咖啡豆會保持絕對的新鮮。我們建議應把咖啡豆保存在乾淨、乾燥、密封的容器中,並應放在避光的地方。
我們不建議把咖啡豆放入冰箱儲存,因爲咖啡豆會吸收冰箱中的氣味。同樣,我們也不建議把咖啡豆冷藏,這同樣會破壞咖啡豆的品質,除非你要延長咖啡豆的保質期。一般以一週爲一個週期,用完再購買新的咖啡豆,這樣比較理想。

FONT-FAMILY: Verdana, 宋體, sans-serif; FONT-SIZE: 12px; PADDING-TOP: 0px" valign="top" width="225"> <p style="border: 0px; padding: 0px; list-style-type: none; margin: 0px 0px 5px; word-wrap: normal; word-break: normal;"> 鉛筆和剪貼板</p> </td> </tr> </tbody> </table> <p> *Cupping Glasses杯評用杯子/SCAA推薦使用5或6盎司的Manhattan 或‘Rocks’玻璃杯。175-225ml的瓷質湯碗也可以。杯子必須清潔無異味並保持室溫。杯蓋可以是任何材料的。*所有的杯子必須保持相同的容量,規格和材質。</p> <p> 樣品準備Sample Preparation</p> <p> 烘焙Roasting</p> <p> 樣品豆必須是烘焙後24小時以內並且至少放置8小時。樣品豆的烘焙標準應在light到light-medium的烘焙度,用agtron測量儀來測的話近似於:原豆58,咖啡粉63,誤差爲+/-1(標準規格是55-60或者SCAA agtron#55)</p> <p> 烘焙應該在8到12分鐘內完成,不能出現明顯的黑頭或焦糊豆。</p> <p> 樣品豆烘焙好後應該迅速用冷風冷卻(不能用水冷卻)。當樣品豆冷卻到室溫時(75℉或20℃)時,應該將其放入密封盒或密封袋保存至杯評時,以減少與空氣的接觸並防止污染。</p> <p> 樣品豆應放置在陰涼的地方,但不要放入冰箱或冷凍。</p> <p> 規格定量</p> <p> 適宜的比率是每8.25克的咖啡粉用150ml的水,這符合黃金盃“golden cup”配方許可範圍的中間值。確定所用杯子的注水量,調節咖啡的量使誤差在上下浮動0.25克以內。</p> <p> 杯評準備</p> <p> 準備好咖啡豆並在杯評開始前現磨,磨好的咖啡粉到浸水之前的放置時間不能超過15分鐘,如果這一點不能保證的話,應把咖啡粉蓋上並在研磨後30分鐘以內用水浸泡。樣品豆應該測量其原豆的重量確保符合上述咖啡容量。咖啡研磨度要比常規的濾泡咖啡研磨度稍微粗些,有70%至75%的咖啡粉能夠通過美國標準的20號曬網。每種至少要準備5杯以確保樣品的一致度。</p> <p> 在研磨每種生豆之前都要研磨一定量的咖啡豆來清潔磨豆機,然後逐次研磨每杯所需容量,確保每杯研磨量的一致性,研磨後把咖啡粉倒入杯子並立即蓋上蓋子。</p> <p> 注水Pouring</p> <p> 杯評用水應保持清潔無異味,但不要經過蒸餾或軟化。理想的總溶解固體是125-175ppm,但要保持在100ppm到250ppm之間。</p> <p> 水應該是新鮮煮沸並且在沖泡時保持約200℉(93℃)的水溫。*水溫還應根據海拔高度來調節。</p> <p> 熱水應直接澆注到咖啡份上並達到杯子的邊緣,確保所有咖啡粉都被浸溼。在杯評開始之前讓咖啡粉靜止浸泡3-5分鐘。</p> <p> 樣品測評</p> <p> 感官測評有以下幾個目的:</p> <p> 確定不同樣品間存在的實際感官差異</p> <p> 描述樣品豆的風味</p> <p> 確定產品的傾向</p> <p> 沒有任何測評可以做到以上全部,但他們都具有共同點。對於杯評者來說知道測評的目的和測評結果的用途是重要的。這個杯評方案決定了杯評者對於質量的感知。具體的風味特徵的品質將被分析,利用杯評者的已有經驗,然後樣品將被依據數值評判進行測評。不同樣品所得的分值便可進行比較,得分高的樣品豆應明顯優於得分低的樣品豆。杯評表格提供了一個記錄咖啡重要風味特徵的方法。</p> <p> Fragrance/Aroma幹香/溼香,風味Flavor,回味Aftertaste,酸度Acidity,醇度Body,均衡度Balance,一致度Uniformity,純淨度Clean Cup,甜味Sweetness,缺陷Defects,和整體評價Overall.具體的風味特徵反映了杯評者對於咖啡品質的正面評價,而缺陷是反映咖啡不良風味的負面評分。整體評價得分是建立在杯評者個人對於風味的感受上,體現了作爲評價個體的杯評者的個人感受。這是建立在16績點量表上以0.25爲增量建立的從6分到9分的質量等級評價表。這些等級爲:</p> <table border="1" cellpadding="0" cellspacing="0" style="padding: 0px; margin: 0px 0px 5px; word-wrap: normal; word-break: normal;"> 9.75</p> </td> </tr> </tbody> </table> <p> 理論上上述測量等級應該從最小的0到最大的10分之間。樣品豆得分低於上表最低分值的是屬於精品等級以下的品質。</p> <p> 測評程序/ 首先應該通過視覺評價樣品豆的烘焙顏色。這個將被記錄下來並且可能會在下面評價具體風味特徵時用作參考。隨着咖啡變涼降溫會導致咖啡風味的變化,而下面對於各項特徵的測評也是建立在這一基礎上的。</p> <p> 第一步:幹香/溼香Fragrance/Aroma</p> <p> 樣品豆被研磨後15分鐘以內,打開蓋子,並通過嗅聞咖啡粉來測評咖啡的幹香。</p> <p> 注入熱水後,保持杯子內咖啡表層不被打破,靜置3到5分鐘。用長匙輕輕撥動咖啡表層3次以打破錶層,並通過輕攪讓咖啡的溼香通過長匙傳遞出來。記錄下幹香/溼香的得分。</p> <p> 第二步:風味,回味,酸度,醇度,和均衡度。</p> <p> 當咖啡液涼到160℉(71℃)時,在注水後的8到10分鐘以內,開始測評咖啡液。迅速將咖啡液啜吸到口中,儘量使吸入口中的咖啡液能更充分地接觸口腔,特別是上顎和舌頭表面。因爲在這個溫度時向喉嚨和鼻腔方向散發的咖啡水汽具有最大的強度,所以風味和回味應在此時被測評。</p> <p> 隨着咖啡繼續變涼(160℉-140℉,71℃-60℃),酸度,醇度,和均衡度將被繼續測評。均衡度是杯評者對於風味,回味,酸度,醇度的整體調和度的評價。隨着咖啡變涼,杯評者對於不同特徵的測評將在不同溫度下進行幾次(2或3次)。按照16分級的評分表,標註出每次的得分,如果有變化(如果樣品隨着溫度變化較之先前品質提升或降低),重新標註水平分數線上的分值並且畫個箭頭指向最終得分。</p> <p> 第三步:甜味,一致度,純淨度</p> <p> 當咖啡液降到室溫時(100℉,38℃以下,)測評甜味,一致度,和純淨度。對於這些特徵,杯評者對每一杯的每個特徵可以給予2分的評分(最高分10分)。</p> <p> 當咖啡降到70℉(21℃)時應結束杯評,整體得分將由杯評者根據以上特徵的綜合性評價給出“杯評者評分”。</p> <p> 第四步 計分Step# 4-Scoring</p> <p> 所有評測進行完畢之後,所有得分將加總並且在右邊的手寫欄裏記下總得分。</p> <p> 單個部分計分Individual Component Scores</p> <p> 特徵評分被記錄在杯評表的適當表格裏。對於部分正面特徵,有一些雙向標記計量表。</p> <p> 縱向的計量表用於記錄感知特徵的表現強度並作爲杯評者記錄的記號。橫向的計量表用來評測杯評者對感知特徵的相對性認知,這種認知建立在杯評者對於樣品的經驗性理解的基礎之上。</p> <p> 每個特徵都有更詳細的描述:</p> <p> 幹香/溼香這些香氣特徵包括幹香(指的是咖啡被研磨後乾粉狀態的香氣)和溼香(指的是咖啡粉被水浸泡後的香氣)。在杯評過程中可以分三步進行:(1)嗅聞放在杯子裏注水前的咖啡粉的香氣(2)嗅聞浸泡後打破咖啡表層釋放出來的香氣(3)嗅聞咖啡被浸泡時的香氣。具體的香氣描述可以被記錄在“質量(qualities)”下面的橫線上,幹香,打破咖啡表層和浸泡時的溼香將被記錄在縱向的5分制計分表上。最終得分將體現樣品豆乾香/溼香三個方面的傾向。</p> <p> 風味/風味反映了咖啡的主要特徵,是“中堅”特徵,包括了從最初的香氣和酸度到最終的回味。它是從口腔到鼻腔所有味覺感知的綜合表現。對於風味的評分,應該通過大口啜吸咖啡以充分調動味覺器官參與評測,並結合評測構成風味的各種香氣和味道的強度,品質和複雜度來進行。</p> <p> 回味/回味指的是當咖啡被吐出或吞嚥後從上顎發散出或留在口腔內部的好的風味(香氣和味道)的長度。如果回味很短或令人不快,便會得到低的評分。</p> <p> 酸度/令人喜歡的酸度一般被稱作“明亮度”,令人不快的酸度一般被稱作“發酸的”。最好的情況下,酸度增加了咖啡的生動感,甜味,和新鮮水果味的特徵,而且一般在啜吸咖啡後會被立即感知並且評測出來,但是那些酸味太強烈或酸味佔主導的咖啡往往令人不快,而且過度的酸度往往不利於咖啡整體特徵的表現。橫向記分表上的得分將記錄杯評者根據咖啡產區特徵和其他因素(如烘焙度,預期用途等)基礎的認知上對於咖啡酸度的相對性感知。那些被認爲具有強酸度的咖啡如肯尼亞,或具有低酸度的咖啡如曼特寧,也會得到相應的偏好得分,雖然他們在強度表現上有很大差異。</p> <p> 醇度/醇度是建立在口腔特別是舌頭和上顎對於咖啡液體的觸覺感知基礎上的。大多數高醇度的咖啡因爲萃取過程中較多膠質和糖被萃取出來,會得到高的得分。被認爲具有高醇度的咖啡如蘇門答臘,或具有低醇度的咖啡如墨西哥,都會得到相應高的偏好得分,雖然他們在強度表現上有很大差異。</p> <p> 均衡度/均衡度用來描述咖啡的風味,酸度,醇度等各種不同方面是怎樣相互調和,補充或衝突。如果咖啡缺乏某些香氣和味道特徵,或者某些特徵表現過度強烈,均衡度得分便會降低。</p> <p> 甜味/甜味指的是由於咖啡裏糖分的存在而形成的甜味和令人愉悅的豐富的風味。在這裏甜味所對應的不好的風味是“發酸的”“聚斂的”和類似“青澀”的風味。這種特徵不會像添加蔗糖的軟飲料中能直接被感知,但是會影響其他風味特徵。每杯可得到2分的得分,最高總分是10分。</p> <p> 純淨度/純淨度指的是從第一口入口到最後的回味中都沒有多餘的負面味道的摻入,一杯咖啡的“透明度”。爲了評測這一特徵,留意咖啡從第一口攝取到最後吞嚥後或吐出後的整體風味。任何非咖啡類的味道或香氣都會降低咖啡的品質。純淨度的計算是通過每杯2分的分值評測加總最高總分爲10分。</p> <p> 一致度/一致度體現了杯評的5杯咖啡的風味的一致性。如果這5杯味道表現不同,便不會得到高分。每杯按2分計算,如果5杯味道一致的話將得到最高分10分。</p> <p> 整體評價/整體評價是杯評者個人對於咖啡各方面特徵的全面的綜合評價。一個在很多方面得分很高但卻“不符合標準”的樣品會得到較低的評分。一個與其產地特徵表現較一致並且達到期望特徵的咖啡將會得到高的得分。一個典型的例子就是在單項評分中中並沒有得到完全體現的單項特徵則會在偏愛評分中得到更高的分數。這一步是杯評小組進行個人評測的過程。</p> <p> 缺陷/缺陷是咖啡中有損咖啡品質的負面風味或乏淡風味。他們被分成兩種。Taint是指咖啡中明顯的異味,但並不是壓倒性的,一般常見於香氣中。在強度評測中一個“taint”將得到2分。Fault指的是咖啡中的異味,一般常見於味道方面,它可能是壓倒性的也可能引起咖啡中令人不快的味道,在強度評分中一個fault將得到4分。缺陷首先應被確認分類(是taint還是fault),然後被描述出來(例如:“發酸的”“橡膠味的”“發酵的”等)並記錄下來。出現缺陷的杯數將被記錄下來並標記,根據缺陷強度給予2分或4分的得分,最後缺陷總分通過分值和杯數的乘積的加總得到。</p> <p> 最終計分Final Scoring</p> <p> 最終計分首先是對單項主要特徵的得分的加總而得到“總分”,然後從總分中減去缺陷的得分從而得到最終計分。下面的計分鍵是被認爲能比較好地根據最終評分判斷出咖啡品質等級的方式。</p> <table border="1" cellpadding="0" cellspacing="0" style="padding: 0px;
