	　　如今市面上所說的低咖啡因咖啡是指咖啡豆烘焙前先經過處理，分離出94%~98%的咖啡因，使咖啡因含量大幅降低。</div>

	　　據傳德國著名詩人&ldquo;歌德&rdquo;也是位咖啡的愛好者，但卻又飽受喝咖啡後無法入眠的痛苦，喜歡卻又無法親近的感受讓歌德去找好友隆吉（Runge）分析咖啡豆的成分，並找出咖啡妨礙睡眠原因。 約於公元1820年隆吉找出影響睡眠的因素是咖啡因，並且研究出分離咖啡豆與咖啡因的方法，因此隆吉成爲低咖啡因咖啡的始祖。</div>

	　　當時隆吉雖然找到咖啡影響睡眠的因素，但萃取咖啡因的技術無法大量生產低咖啡因咖啡，直到公元1903年德國咖啡豆進口商羅塞魯斯（Ludwig Roselius）發現咖啡豆一但被海水浸溼，咖啡因的含量就會減少很多， 於是他請了一批化學家進行研究開發萃取咖啡因的技術，使萃取技術有了重要突破，低咖啡因咖啡纔開始進行量產。</div>

	　　雖然當初研究咖啡因影響睡眠的因子是隆吉，但低咖啡因的推手正是那位偉大詩人歌德。</div>
