咖啡豆如何分級?由生產國制定的三項基準<br />
<br />
購買咖啡豆時，會看到（哥倫比亞Supremo)或（巴拿馬翡翠莊園藝伎）等標標，你是否曾經疑惑過，生產國之後的這些名稱究竟代表什麼意思呢?其實只要瞭解其中的含意，就可以成爲購買及挑選咖啡豆時的參考基準。<br />

在生產國之扣，常見的名稱組合是：品質等級、產地莊園名稱、品種、加工處理法等。以哥倫比亞Supremo 爲例，就是生產國與國等級的標示，而巴拿馬翡翠莊園藝伎則是以國名、莊園及品種名稱來組合。<br />
<br />
咖啡豆的分級主要可分成三種方式：產地高度、綱目大小、瑕疵數及綱目大小。多數生產國會採用其中一種方式來標示等級。產地高度：是指種植地點的海拔高度。因爲在早晚溫差越大的高地，所種出的咖啡品質越好。以瓜地馬拉而言，會標示爲SHB，若是薩爾瓦多則標款爲SHG，意味着以產地高度分級的最高等級。<br />
<br />
綱目大小則是代表咖啡豆的顆粒大小，生產國視顆粒越大的咖啡豆品質越高。哥倫比亞的咖啡豆所標示的Supremo及Excelso，即是以此來分級，前者被稱爲頂級豆。<br />
瑕疵數及綱目大小則是依瑕疵豆等異物混入率與顆粒大小區分等級。以牙買加藍山來說，No.1是異物混入率低且咖啡豆顆粒較大的最高等級。低於此等級的咖啡豆則依序分級爲No.2、No.3。<br />
<br />
<strong>咖啡原生種與味道差異</strong><br />
<br />
咖啡豆有三大原生種，分別是阿拉比卡種、加納弗拉種（或稱羅布斯塔種）及賴比瑞亞種，當前市場流通的主要品種是阿拉比卡及羅布斯塔這兩個原生種。前者風味好，目前在店鋪銷售的多半是此品種。後者因爲具有獨特的苦味與特性，經常用來爲即溶咖啡增量等。有些咖啡愛好者會在調配綜合咖啡時刻意加入羅布斯塔，不過一般喝咖啡時，倒是沒有選擇此品種的理由。</span><br />
